Head Chef Brian Dao was born and raised in the southern part of Vietnam, Ho Chi Minh City. Since joining Gin Long Canteen, he has been creating unique dishes that are inspired by traditional Vietnamese dishes with a twist of modern food preparation processes and fresh, local ingredients.
Other than Vietnamese, the multicultural kitchen team, including Malaysian and Thai, create a great profile of South East Asian flavours.
The Lychee Duck Curry is one of their signature dishes. Prepared with the all-time favourite Thai Red Curry and the sweetness from lychee, cherry tomatoes and pineapple balancing the flavours, it’s definitely an unforgettable dish!
